SISTER'S TOMATO LAMB SHANK - SHANK YOU VERY MUCH


 TRADITIONAL LAMB SHANK RECIPE from my youngest sister - Master chef of note 🍴🥣

This dish is the ideal comfort food typically in winter. 

You will need at least 3 hours in your day from start to finish when tackling this recipe.  It is made with a lot of love and care, producing utter indulgence.  


Ingredients:

2 x onions - chopped
2 x carrots - sliced 
2 x celery sticks - chopped 
2 x cloves of garlic - crushed
800g of fresh tomatoes or 2 x tomatoes - chopped
1 x sachet of tomato concentrate
1 x tablespoon brown sugar
Salt and pepper
3 x teaspoons balsamic vinegar
1 x tablespoon of crushed green peppercorns - optional 

METHOD:

Oven on 180 degrees Celsius and later you will turn it down to 160 degrees Celsius.

Using a cast iron pot - or any pot that can be transferred into the oven with its lid.

Heat some oil - enough to coat the bottom of the pot.  Sauté the onions, carrots, celery and garlic, slowly until soft.    Remove with slotted spoon and set aside.
Add a little more oil and brown the meat, now add the onion mixture, tomatoes, tomato concentrate, sugar, balsamic vinegar and peppercorns.
Cover with lid and place in the preheated oven for 30 minutes at 180 degrees and then lower to 160 for the next 2 and a half hours.  

SERVE WITH MASHED POTATO and or sour kraut.
